New & Unique: The Wine in the Stone

The Grüner Veltliner Steinwerk 2018 is a one-of-a-kind-wine. The grapes come from Spitzer Graben, known for its traces of marble in the soil structure. The Grüner juice is fermented and matured inside a sheer block of Wachau marble.

The idea for this project came from our cellar master Heinz Frischengruber about two years ago: “I just wanted to know what would happen if Grüner Veltliner was fermented and left to mature in stone rather than wood or steel. It was obvious to use marble as the material. We have been mining it in the Wachau for centuries. ”He contacted his friend Heinz Dissauer (www.stein-werk.at), a local stonemason, who immediately got to work. A boulder of sheer Wachau marble weighing in at six tons was processed into a high stone cone just shy of three metres high, with a capacity of around 700 litres.

Our Grüner Veltliner is from selected vineyard sites in the Spitzer Graben and matured in the vessel over the past year. “Due to fine definitions in the stone, there was slight but noticeable micro-oxidation. In addition, the fermentation started quickly and spontaneously or, due to the high temperature absorption capacity of the stone, it ran smoothly and slowly,” explains Heinz Frischengruber. All of this seems to have been positive for the wine, which was bottled without fining or filtration with minimal sulphur.  As part of another experiment, we also fermented part of the Grüner Veltliner in granite vessel, sourced from a quarry in the neighbouring Bavarian Forest, which is geologically based on the same mountain range as the Wachau.

In the glass, this wine is chalky and compact. The aromas are spicy and herbal, reminiscent of thyme, tarragon, fennel and salted almonds. The finish is long and focused.
