Wine in stone
Our Grüner Veltliner Steinwerk is made from grapes grown in selected sites of the Spitzer Graben, and is fermented and matured in a large chunk of Wachau marble as well as in a stone vessel from granite.
The first Grüner Veltliner Steinwerk premiered in 2018, and it revealed new facets of the great grape variety. Now the 2019 vintage is also in the bottle and is reflecting through that year’s perfect weather conditions even newer dimensions!
The idea of vinifying Grüner Veltliner in granite and marble came to our cellar master, Heinz Frischengruber, a good three years ago. “Both materials have a high temperature absorption capacity and therefore guarantee an even and slow fermentation process,” explains Frischengruber. “Also, with fine irregularities in the stones, there is a slight but noticeable micro-oxidation. All of this has a correspondingly positive effect on the wine, which was bottled unfiltered and unfined.”
The Grüner Veltliner Steinwerk 2019 is chalky and compact, showing aromas of wet stones, dried herbs and ripe vineyard peaches. And it delivers a focused, clear and mineral finish.
