Handcraft & precision

With the completion of the grape reception and processing building, one of the largest projects in the history of the Domäne Wachau came to fruition in time for the harvest in early September.

The construction took two years to complete and the new production facilities are overlooked by the Kellerberg vine terraces. We can now process even smaller vineyard parcels effectively, something we’ve been following for some years now. We aspire to the maximum attainable quality; pure handcraft thus enters into a symbiosis with the precision of modern technology.

The new processes ensure that the must and maceration are handled as gently as possible. The transformation of hand-picked grapes into wine takes place on a total of four levels, aided by gravity. The pneumatic presses, which are perfect to handle all wines styles, can also process small batches for micro-vinifications. Further stages of wine production and maturation occur deep beneath the ground, where the ambient and climatic conditions are ideal.

Our mission has always been to capture the distinctive nuances of all our Wachau vineyards, in harmony with our grape-growing families. The state-of-the-art grape reception and processing area acknowledges this and we now have the opportunity to elaborate their specialties with even more precision.
