Precision Pruning – Smart Cuts, Strong Vines
With the beginning of a new wine year, pruning during the dormant season in our vineyards is one of the most important tasks. In winter, vines store their energy reserves in the roots and prepare for budburst in spring. Different training systems are used depending on site, variety, and cultivation method, and every cut shapes the structure of the vine over many years. It lays the foundation for grape quality and ultimately for the wine in the glass. Each vine is assessed individually so that pruning can balance growth, yield, and quality while maintaining long-term vitality.
Building on this, precision pruning is a fundamental technique for our growers. The aim is to keep pruning wounds as small as possible, since vines cannot seal them naturally. This helps prevent drying of the sap flow caused by trunk diseases such as Esca. The gentle pruning method developed by Simonit & Sirch is a refined form of precision pruning designed to support the vine’s natural tendency to branch. Implementation requires deep expertise, which is why this approach is communicated to our growers through training sessions and hands-on instruction and actively applied in the vineyards.
Whether precision or gentle pruning, the result of this precise craftsmanship is healthier, more resilient vines with longer lifespans that respond more evenly to stress factors such as drought or climate fluctuations. This first crucial step of each new year — one of many — contributes to the distinctive, origin-driven wines of Domäne Wachau.
